Only in its second year, the Great Clay County Fair Bar-b-que Contest will feature grilled pork ribs for 2007.
"Each exhibitor will have the option of marinating, rubbing, using bar-b-que sauce or smoking," the contest entry, explains Superintendent Sharon Simington.
THe idea is to spark interest and competition for area chefs, she adds.
Del Brockshus, who owns del's Garden Center in Spencer is a big Clay County Fair supporter and it was his interest in grilling that was the incentive to start the contest last year according to SImington.
There will be a $100 top-prize for the best grilled pork ribs, plus $75 for second place and $25 for third place.
Contest rules, detailed in t he premium book, not that recipes are optional. Judging is based on 50 percent for flavor, 20 percent on appearance, and 30 percent on the versatile use of the food.
The best decorated grilling site will be recognised. The use of paper plates is not allowed. Complete rules and information is available at www.claycountyfair.com or at the Clay County Fair office or at Del's Garden Center in Spencer.
